Russian Cheesecake

This is one of our traditional family recipes that combines healthiness and incredible taste. It’s a rather light alternative for the more health-conscious cake lover.

Ingredients for the dough

  • 350 g margarine
  • 4 eggs
  • 350 g all-purpose flour
  • 1.5 teaspoons of baking powder
  • 4 tablespoons cocoa
  • 300 g sugar

Ingredients for the greek yogurt mixture

  • 800 g plain Greek yogurt
  • 1 package of vanilla pudding powder (40 g)
  • 2 tablespoons semolina (can be left out)
  • 300 g sugar
  • 1 package Dr. Oetker vanilla sugar (optional, Amazon)
  • 5 eggs

Preheat oven to 450 degree Fahrenheit.

Making the dough

  1. In a mixing bowl, stir together the eggs and sugar.
  2. Add the margarine and stir until you have a smooth texture.
  3. Blend flour, baking powder and cocoa in a separate bowl and sift it into the margarine mixture.
  4. Take half of the dough and cover the bottom of a 9-inch spring form pan.

Making the Greek yogurt mixture

  1. Separate the egg whites and egg yolks.
  2. Mix the egg whites until they have a stiff texture and place it in a separate bowl.
  3. Mix the egg yolk and sugar until all the sugar has integrated well.
  4. Add semolina and vanilla pudding powder and stir for another minute.
  5. Add the greek yogurt until combined. Do not over-stir.
  6. Fold in the stiff egg whites.

Final steps to make the cake

  1. Add the Greek yogurt mixture on top of the dough.
  2. Using a regular tablespoon, place the rest of the dough on top of the Greek Yogurt mixture. Distribute the dough evenly.
  3. Bake the cake for 10 minutes at 450 degree Fahrenheit and then at 350 degree Fahrenheit for another 40 minutes. Leave the cake in oven to cool down so that it doesn’t shrink.
  4. Decorate the cake with sifted powdered sugar.
