Cream Cheese Leek and Ground Meat Soup

This rich and creamy comfort soup is the perfect dish on a cold autumn or winter night with friends or all by yourself. Every spoonful is a taste of “Gemütlichkeit.” The recipe below accounts for 10 people.

Ingredients

  • 2 pieces of leek
  • 500 g ground meat ( 250 g beef and 250 g turkey)
  • 8.5 cups of vegetable or beef broth (2 liters)
  • 750 g cream cheese (plain and with herbs)
  • Salt and pepper to season

Preparation time: 15 minutes
Cook time: 25 minutes

How to make the Cream Cheese Leek and Ground Meat Soup

  1. In a large pot, fry the ground meat with 2 tbsp of olive oil for 5 minutes.
  2. Wash the leek and cut it into thin rings. Add the rings to the ground meat and fry for another 3 minutes.
  3. Add the vegetable or beef broth.
  4. Gradually add the cream cheese and stir until the soup has an even creamy texture.
  5. Season with salt and pepper.

Note: The soup will get thicker as it cools down. If you prefer a more liquid version, simply add more broth.
